Fried Rice Indonesian Style – Nasi Goreng
Ingredients:
1.Long-grain rice 400 g (2 cups)
2. Water 625 ml (2 ½ cups)
3. Salt 2 tsp
4. Chicken breast 1, diced
5. Vegetable oil or margarine 2 Tbsp
6. Onions 2 large, peeled and sliced
7. Vegetable oil or margarine 2 Tbsp
8. Onions 2, large, peeled and sliced
9. Garlic 2 cloves, peeled and chopped
10. Coriander (Ketumbar) ½ tsp, ground
11. Galangal (laos) ½ tsp, ground
12. Dried prawn (shrimp) paste (terasi) 1 pea-size
piece
13. Red chili 1, crushed
14. Sweet soy sauce (kecap manis) 2 Tbsp
15. Cooked prawns (shrimps) About 225 g (1 cup)
16. Fried egg 1
Steps:
1. Was rice twice and drain. Transfer to a saucepan and add water and salt. Bring to the boil and simmer uncovered until all liquid has been absorbed.
2. Cover, lower heat and cook for 15 minutes more. After rice is cooked, set aside until sufficiently cool
3. Fry diced chicken in oil or margarine until light brown. Add sliced onions and sauté with chicken until onions brown
4. Lower heat and add chopped garlic , coriander, galangal, and dried prawn paste. Stir well and add crushed red chili, Fry about 1 minute
5. Add soy sauce and prawns, mixing thoroughly. Finally, add pre-cooked rice. Maintain a low, steady heat and stir constantly until rice turns light brown
6. Give a fried egg on the top of the fried rice
(except prawn,we can also use any chicken or fish)
